曾有一个学生签证过后来跟我告别,小伙子对自己未来的美国生活很憧憬,说:“我要去找个美国女朋友,听说跟她们约会都是各付各的账,太划算了!”我没好意思当场捅破这抠门儿孩子的彩色泡泡,却暗地里为大洋彼岸的美国姑娘们捏了把冷汗。

不知道什么时候开始,国内很多人流行一种认知──美国人吃饭都是各付各的账,且锱铢必较地只为自己的食物买单。现实是不是这样呢?我在美国生活这么多年,吃了这么多饭,会了这么多友,这样的情况并不是很多。偶尔中午实在找不到喜欢的同事一同午餐,只好随便在楼里拉一位脸熟的凑合,付账时我当然不能要求人家只吃沙拉的和我这吃烤肉大餐的split the check,我们会在结账的时候告诉员“We'd like separate checks please.”.餐厅里用check 代替bill 表示账单是英语一个常见却不见得准确的用法。这个说法延续了印刷支票还不曾问世时代的习惯──人们用支票付账,却事先需要服务员帮忙手写一个支票的模板。这用法许多年来被约定俗成的继承下来,所以想要买单的时候我们会说“Check please”. 说到男女(或者男男女女啦)约会的开销,有很简单的guideline:即谁主动谁付账──首先提出当次约会的人要做好买单的准备。其实美国妇女的思想并没有解放到我们想象的那么疯狂,个个主动约会男士,所以最后还是男士付账占多数啦。要说起这件事上的文化思维差异,我觉得美国男人更能坦然面对女方提出付一半账单的“羞辱”,因为他们认为尊重对方的EGO 比心疼她们的钱包来的重要。

商务宴请中的道理同上──首先提出邀请的一方买单。在美国饭后抢账单脸红脖子粗的场景还是比较罕见的,因为礼节上被请客方应该尊重请客一方的隐私,不去探看账单数目。不过若是你铁了一颗买单的心,最潇洒的方式是在其他人到达前低调地将信用卡和一张十块钱小费塞进餐厅的maître d'手里。

与相熟的朋友聚餐,美国人多会选择share the bill,即AA 制。提醒大家这个貌似英语的缩写,真的不是英语。另外还有一个在中国街头巷尾使用频率极高,多数美国人从来不用的短语──going Dutch.在反歧视雷达超级敏感的美国,这个暗指荷兰人小气的词被归置到politically incorrect的类别里,基本打入了冷宫。所以今后当你熟悉的那个“勾搭吃”马上要脱口而出的时候,用“Let's split the check.”代替吧。(作者:李淼)

中美饮食习俗比较

中国人把做菜称之为“烹调”,其饮食观的精髓是“五昧调和,味道为王”,还强调“食无定味,适口者珍。”西方的饮食观则是“营养为尊”,即便在当今最富有的美国,在吃的方面,更是“马虎”。中华饮食是否有“不可科学”之嫌呢? 且看下面一组比较--

美国营养学家赫尔曼教授在对中美两大民族完全不同的饮食习惯作了长达一年的深入研究后指出:中美饮食习惯都各有其长处和短处。他认为:

中国人饮食习惯的十大优点:

一、中国人每天进食的新鲜蔬菜要比美国人多得多,而美国人虽每天进食大量蛋白质,但肠胃功能却因进食纤维素太少而受到影响,因此消化系统的患病率及患癌率均大大超过中国。

二、中国人喜食粗粮,而美国人偏爱精白粉等细粮。而实际上,粗粮所含营养物质要比细粮多。

三、中国人爱吃植物油,而美国人做菜喜用含胆固醇较高的动物油。此外每天还摄入大量黄油。怪不得美国人心血管发病率特别高。

四、中国城乡居民都喜豆浆、豆腐,豆芽等豆制品。而美国人却往往“敬而远之”。

五、中国人饭后、迎客都沏一杯热茶。喝茶能降低血液中胆固醇含量。相反,美国人喜喝的咖啡。钾有可能提高血脂并刺激心脏。

六、餐毕,中国人爱吃点瓜果,而美国人往往再加一份甜食。瓜果自然比甜食更利健康。

七、中国人大部分家庭习惯于每天买新鲜食品。而美国人喜欢从超市一次性大量购回,然后每天食用冷冻食品。美国人食用罐头食品(含种种不利健康的化学添加剂)„及腌腊食品(含有多种可能致癌的物质) 分别为中国人的15倍和6倍。

八、中国菜名颇富吉利色彩,席间互说祝福话,餐毕往往尽情愉快、心弦放松。

九、中国人用筷时需动用数十条肌肉和10余个关节,因而称之为”健身活动”并不夸张。

十、中国人用餐时爱加醋、姜、蒜、葱、辣椒等佐料,以起杀菌、消脂、增进食欲、帮助消化等作用。

美国人的饮食习惯也有十大优点:

一、美国人做菜放盐量只及中国人的一半,而摄入太多食盐有可能在中老年期发种种疾病。

二、美国人做菜不爱放味精-味精含钠,摄入过量有损健康。

三、美国人做菜放的食油比中国人少。

四、美国人的分餐制自然比中国人的合餐制卫生。

五、美国人不吃猪肝。猪腰等内脏,因为动物内脏无一例外含有高量胆固醇。

六、美国主妇不爱用大大炝锅,厨房通风条件也较好,因而避免了吸入大量易致肺癌的油烟。

七、美国人喜一日多餐,这比中国人的一日仅二、三餐科学。

八、美国人喜清蒸食品(营养物破坏较少) ,而中国人则偏爱热炒(营养物破坏较多) 。

九、美国人过节或请客不喜暴饮暴食,这与中国人的大吃大喝形成了鲜明对比。

十、要是把吸烟列入广义的饮食习惯,那么,美国人中的戒烟者与日俱增,相反中国人却仍把吸烟当作一种“时髦”。

中国食文化概述

世界的饮食由于地理位置、风俗习惯、物产等的不同,形成了各异的风格。

世界菜系的分类,大致有两种说法:一说为三大菜系,一说为四大菜系。三大菜系是指:中国菜系,包括中国、朝鲜、日本、东南亚若干国家及南亚一些国家,以中餐为代表,这是世界人口最多的一个菜系。法国菜系:包括欧洲、美洲、大洋洲等许多国家,占地面积最大,以西餐为主体。土耳其菜系:又称清真菜系,包括中亚、西亚、南亚及非洲一些国家。四大菜系则加上俄国大菜。

中国菜的特点是选料严格,刀工精细,讲究拼配,调味多变,注意火候,要求烹制出来的菜肴色、香、味、形俱佳。但是,中国菜是由多种地方莱、少数民族莱、宫廷菜、官府菜、寺院菜和各地名特小吃组成的。它们的具体烹调技术和菜点风味又各具特色,各擅胜场。正是这些多姿多来的地方菜,构成了风味独特的中国菜。

地方菜是相对于宫廷莱、官府莱和寺院菜而言,这是中国菜的主体,地方菜大都以地区和省份划分,旧有“四大菜系”之说,即鲁、川、粤、苏四个流派。鲁菜主要指山东莱,亦称北菜,包括京、津和我国北方地区。苏莱又称淮扬菜,含上海、江、浙菜系。亦有“八大菜系”之说,即鲁、川、粤、苏、闽、浙、湘、院菜,或日“十大菜系”,即鲁、川、卑、闽、赣、徽、扬、京、沪、苏。自然,这样的排列并非是没有争议的,有人去赣、徽而加入津、湘,或加入鄂(湖北菜)。在上述菜系中,特色突出,影响深远,声誉远播的则是北京菜、四川莱、山东莱、广东菜和淮扬菜。

“日啖百果能成仙”。道家饮食烹饪上的特点就是尽量保持食物原料的本色本性,如被称之为“道家四绝”之一的青城山的“白果炖鸡”,不仅清淡新鲜,且很少放佐料,保持了其原色原味。佛教在印度本土并不食素,传入中国后与中国的民情风俗、饮食传统相结合,形成了其独特的风格。其特点首先是提倡素食,这是与佛教提倡慈善、反对杀生的教义相一致的。其次,茶在佛教饮食中占有重要地位。由于佛教寺院多在名山大川,这些地方一般适于种茶、饮茶,而茶本性又清淡醇雅,具有镇静清心、醒脑宁神的功效,于是,种茶不仅成为僧人们体力劳动、调节日常单调生活的重要内容,也成为了培育其对自然、生命热爱之情的重要手段,而饮茶,也就成为了历代僧侣漫漫青灯下面壁参禅、悟心见性的重要方式。再次,佛教饮食的特点是就地取材,佛寺的菜肴,善于运用各种蔬菜、瓜果、笋了、菌菇及豆制品为原料。

伊斯兰教教义中强调“清静无染”、“真乃独一”,所以其饮食形成了自成一格的格局,称之为“清真菜”。穆斯林严格禁食猪肉、自死物、血,以及十七类鸟兽及马、骡、驴等平蹄类动物。所以清真菜以对牛、羊肉丰富多彩的烹饪而著名,如光是羊肉,就有烧羊肉、烤羊肉、涮羊肉、焖羊肉、腊羊肉、手抓羊肉、爆炒羊肉、烤羊肉串、汤爆肚仁、炸羊尾、烤全羊、滑溜里脊等,清真系列中还有一些小吃也颇具特色,如北京的锅贴、羊肉水饺,西安的羊肉泡馍、兰州的牛肉面、酿皮、新疆的烤馕、烤包子,也别具风味。

中国烹饪文化的特征

中国烹饪文化在中华民族文化中有着重要的地位,它以极其鲜明的民族特点作为“国粹”之一,成为民族文化的重要组成部分。中国烹饪文化具有鲜明的民族个性,和世界上其他烹饪文化相比较,主要表现在以下方面:

1. 中国烹饪历史文化悠久,继承连续,起点较高,兼容和融合能力强

中国烹饪是世界上在史最悠久的烹饪文化之一。如果将直接用火熟食的历史计算在内,中国的熟食文化至少可追溯到距今五六十万年前。难能可贵的更在于中国烹饪文化从产生之后一直延续到今,没有间断,而世界上其他三大文明古国的烹饪文化均已随着其民族主体的消亡而中断了。所谓的“火食之道”不是仅指简单的用火熟食,而是利用一定的手段,把本来互不相容的水和火和谐统一在一起的高度技术创造,是同一时期的其他民族烹饪中罕见的。中华民族文化本身是具有多元的性质,烹饪文化也不例外。在接受外来烹饪文化上显现出泱泱大国雍容大度的风范。中国烹饪文化在兼容并蓄中善于吸收他人之长,将很多因素融于自己的文化中,成为自己的组成部分,这也是中国烹饪文化源远流长的原因。

2. 中国烹饪文化强大生命力的体现

在中国无论是物态的、行为的、还是制度的、社会心态等烹饪文化各构成部分,都有自己的系统。在各系统内部,所包含的内容和文化层面非常丰富,呈现出绚丽多彩的景象。如物态文化部分从构成内容上看,有原料、工具、产品三个部分,而且每一部分都有其体系;从层面上看,即是物态文化本身,又包含又诸多制度的、心理的、意识的文化内容。中国烹饪文化经过万年跋涉,积蕴了如此广博深厚的内涵,升华到如此精深的境地。如烹饪中寓含着治理国家的大道理,饮食中体现着哲学思想,吃可以形成制度来规范道德、伦理和等级等等。

在中国烹饪文化中只有达到生理要求和心理享受的层次,才算是真正懂得了饮食之道的真谛。再如中国烹饪文化中蕴含的艺术观也独具特征。饮食艺术不仅仅是五味调和和筵席艺术,而更是高品味精神生产和享受的艺术。在享受美味的同时有意识地创造一种和谐、高雅、充满天伦之乐、人际之爱的氛围并尽情加以享受,在物质美和精神美的完美统一之中,升华到物我融合的境界,这才是饮食艺术的极至。

3. 中国烹饪文化有强烈的重食、重味、重养、重理、重利意识 中国烹饪文化中的重食观贯穿于整个传统烹饪文化时期,也深深影响到现代。重食观的理论依据就是“民以食为天”、“国以民为天”;人民丰衣足食才能保持国家统治的稳定。“味”是中国传统食品评价中最重要的标准,“食之无味”、“味同嚼蜡”是食品之大忌。“风味”之“味”,就是从最主要的角度概括各种烹饪流派之别的。重养,一是重是食品对

一个菜系的形成和它的悠久历史与独到的烹饪特色分不开的。同时也受到这个地区的自然地理、气候条件、资源特产、饮食习惯等影响。有人把“八大菜系”用拟人化的手法描绘为:苏、浙菜好比清秀素丽的江南美女;鲁、皖菜犹如古拙朴实的北方健汉;粤、闽菜宛如风流典雅的公子;川、湘菜就象内涵丰富充实、才艺满身的名士。

中国“八大菜系”的烹调技艺各具风韵,其菜肴之特色也各有千秋。山东菜系由济南和胶东两部分地方风味组成,特点:味浓厚、嗜葱蒜,尤以烹制海鲜,汤菜和各种动物内脏为长;四川菜系有成都、重庆两个流派,特点:以味多、味广、味厚、味浓著称;江苏菜系由扬州、苏州、南京地方菜发展而成,特点: 烹调技艺以炖、焖、煨著称;重视调汤,保持原汁;浙江菜系由杭州、宁波、绍兴等地方菜构成,最负盛名的是杭州菜,特点:鲜嫩软滑,香醇绵糯,清爽不腻;广东菜系有广州、潮州、东江三个流派,以广州菜为代表,特点:烹调方法突出煎、炸、烩、炖等,口味特点是爽、淡、脆、鲜;湖南菜系注重香辣、麻辣、酸、辣、焦麻、香鲜,尤为酸辣居多;福建菜系由福州、泉州、厦门等地发展起来,并以福州菜为其代表,特点:以海味为主要原料,注重甜酸咸香、色美味鲜;安徽菜系由皖南、沿江和沿淮地方风味构成,皖南菜是主要代表,特点:以火腿佐味,冰糖提鲜、擅长烧炖,讲究火工。

总之,中国饮食文化是一种广视野、深层次、多角度、高品位的悠久区域文化;是中华各族人民在100多万年的生产和生活实践中,在食源开发、食具研制、食品调理、营养保健和饮食审美等方面创造、积累并影响周边国家和世界的物质财富及精神财富。
